XILLI is a collection of authentic, artisanal Mexican salsas, moles, escabeches and adobos handmade in Brooklyn using the freshest ingredients and the most conscientious methods.
A staple of any authentic Mexican kitchen, “xilli” is the original Nahuatl term for chili (chile in Mexico). Chili remnants have been found in pottery from Puebla and Oaxaca, dating its use and cultivation as far back as 3000 BC.
Our Mission is to make the highest quality salsas, moles and pickles, representing Mexico’s cultural heritage while supporting artisans and producers both in the U.S. and Mexico.
We build positive relationships with our purveyors, our planet, our community and our customers, and are committed to working directly with our producers to ensure both the quality of our products and fair wage practices.
All of our products are created in small batches, allowing us to keep a tight rein on quality, while leaving space for experimentation. No matter what your recipe’s origins, our products add subtlety and vitality to any dish because the one ingredient they all have in common is so simple and versatile: chilies.
